Sausage, Scampi and Scones

The two traditional Irish meals that I have had for lunch include a dish called beef and Guinness meat pie, which is a meat stew with a flaky  pastry on top served with vegetables and gravy, and scampi and fries, which was deep-fried shrimp with fries. 

Dinner: Like with lunch, when I first started my journey I was eating out for dinner or getting microwave meals from the nearby convenience store. The best dinner that I had was an amazing meal of lamb, rice and salad with garlic sauce from a Mediterranean restaurant. Typically I cook dinner myself, and I make stir-fry chicken with either rice or noodles, Irish sausage, rice, and vegetables, or chicken, rice and vegetables.

How did I feel when I tried it?:

It makes me so happy when I get the chance to eat delicious food after a long day of classes and doing assignments. I like to practice mindful eating a lot more here in Ireland, in which I try to slow down my chewing and think about the flavors on my tongue. This makes the eating experience more memorable and enjoyable. I want to make sure that I cherish each bite!

How is the food prepared?:

I will talk about how my favorite dish that I have had so far, scampi and chips, is prepared:

Dublin Bay Prawn or lobsters are dunked into a bowl consisting of mixed eggs, flour, and breadcrumbs and then either pan-fried in olive oil or placed into a deep fryer until they are golden brown. The chips (or fries) are made from scratch, by cutting potatoes and frying them in oil. It is served with a lemon slice that you can squeeze on top of the scampi.
