Comida Ourensana

How is the food prepared?:

Many restaurants and seafood shops will take the entire octopus and throw it into a huge pot of boiling water. They then take the octopus out of the pot after it has cooked and then either serve it whole or cut it up into pieces and season it. I do not yet know how empanadas are made but I will definitely make sure to ask someone soonl

Is this food connected to the local environment? How?:

Both of these foods are intrinsically linked with the local environment. Galicia is right next to the ocean, so many types of seafood are delicacies here, including octopus. The empanadas in Ourense are usually made with local bread and then filled with cod, tuna or meat, all of which are ingredients that can easily be found locally. The meat for local ham and bocadillos often comes from the same area.

In addition, chestnuts are native to Ourense and there is a chestnut festival every year on November 11th.  Unfortunately, I can't eat chestnuts because I am allergic!
