Seswaa (pulled beef) is a luxury food and is made for very special occasions. It is super tender and has a rich flavour. If you are a special guest, which I am often due to the colour of my skin, you will receive a very healthy portion of seswaa.
Intestine (serobe) is put into a pot in a huge blubbery mess with lots of visible fatty sections. It is then cut up with special scissors, due to it sliminess. It is then cooked and cooked and cooked so it is not too rubbery. They could not cook it enough for me.
Seswaa is all the meaty portions of the cow or goat added to a big pot and cooked in water for a long time. Then it is pulled apart using a stick with a fork at the end or a special tool with metal loops at the end. This is done until all the meat is in small thin strips.
Most people have livestock, whether they live in the village, town or city. They keep them at the Moraka, or cattle post. This is a section of land that is provided to all citizens to keep their animals. It is very common to go to the cattle post each weekend to tend to the needs of the animals. Much of the land is government grazing land and it is allowable to let your livestock roam. The grasses in Botswana make the beef have a unique and sought-after flavor. The local environment is a semi-arid desert that is very flat which makes it easy for the livestock to graze.
