The most interesting place I visited was Ambato! I'll be traveling more soon, but other than the small day trip, I've just been in San Miguel for all of January.
Just a fun tidbit about traveling in Ecuador is how much I've adapted to long bus rides. I had taken a bus in the United States only a few times in my life, but now consistently take 3-6 hour journeys at least once a month. To fill the time, I read (I don't get motion sickness even on the Andean mountain curvy roads, which I do consider a superpower), listen to audiobooks (when said roads do make me a little motion sick), listen to music, and stare out the window at the scenery.
