I find this particular dish on the menu at nearly every restaurant with only a few variations in the ingredients or gravy. Another meal that I tried was beef stew. In Ireland, beef stew and many other stews are common because they feed you and keep you warm when it's cold or rainy.
I felt like the chicken supreme was such a surprisingly flavorful dish. It looked nice but ordinary, or so I thought, but the flavors were so delicious and unique. This was one of my new favorite meals. The beef stew is misleading in its appearance. It looks like something you could find anywhere, even in the United States, until I tasted it! The beef was so tender and juicy; it nearly falls apart in your mouth. I felt like I was eating something special because stews take a long time to make and they have a homemade feel to them.
The chicken supreme is prepared by roasting the chicken. Then, inside the chicken are the silkiest, buttery mashed potatoes. Over the top is a delicious gravy of parsnip and a little bit of parsley. A beef stew is prepared by lightly browning the beef first and then slow-cooking it with diced onions and peppers. You put it all together, add a bit of water and tomato to create a thickened gravy which makes the stew, and you serve it with potatoes, of course!
This food is connected to the environment much like most of the food in Ireland, with a strong connection to the farmers who provide the ingredients. Quality, fresh local ingredients are very important in Ireland and that's what makes their food taste so delicious.
