A common meal in the Ecuadorian Andes includes choclo, or a specific type of corn with kernels that are much larger than what we are used to in the States!
We made Ecuador's national food, encebollado, or an onion soup with fish, yuca, onions and chifles (plantain chips) on top.... or popcorn, if you eat it Andean-style!
We made lots of cheese-stuffed corn tortillas in the Andes
