Eating My Way Through Panama

The past couple of weeks, my coworker has been bringing in mangoes from his tree (it’s mango season!) for our after-lunch treat. There are a couple different types of mangoes in Panama. There are the typical mangoes like you see at the grocery store in the U.S. but another type which is longer and thinner. Panamanians use this bright yellow mango before it is fully ripe to make mango salad. When the mango is still green on the outside, it has a sour taste. I made it once with mangoes I brought back from the countryside. I thinly sliced the mango and added vinegar, salt and lemon juice. This mango salad is often sold by street vendors.
