¡Buen Provecho! Ecuadorian Cuisine

Introduction:

Ecuador has lots of different and tasty foods! No matter where you go, you’ll find amazing fresh fruits and vegetables. On the coast and in the Galápagos Islands, people eat a lot of seafood (like fish and shrimp). In the highlands and the Amazon, you’ll find all kinds of meats, grains and root vegetables (veggies that grow underground). Every region has something special to offer -- it's like a giant food adventure from the mountains to the sea!

What food did I try?:

One dish I tried was Cuy. Cuy is a guinea pig. It is very common in the Highlands region.

How did I feel when I tried it?:

I honestly did not enjoy it. I ate it to be respectful because it is a beloved Ecuadorian dish, but if I were to choose something to eat, it wouldn't be Cuy.

How is the food prepared?:

Cuy comes in various yummy ways -- grilled, fried and even in soup. It is usually served with salad and potatoes in a peanut sauce. In addition, mayonnaise is often sprinkled on.

Is this food connected to the local environment? How?:

The food in Ecuador is super special because it comes from the land all around them!
