Food memories and family time

How is the food prepared?:

As I understand it, the shawarma meat comes from lamb, beef, chicken, turkey or veal. The block is made by alternating strips of fat and pieces of seasoned meat on a vertical spit. The meat is grilled on this vertical spit for several hours. Shavings are cut off the spit block of meat when people order the food.

Is this food connected to the local environment? How?:

Some of the ingredients that the restaurant uses come from Middle Eastern stores, but all of the produce comes from local farms and grocery stores that support those farms. The restaurant is right next to one grocery store and workers shuttle back and forth with grocery carts buying local produce.
