Many of our ingredients came from this fruit and vegetable stand on the side of the road
In our cooking class, we made chilaquiles (chips) in enchilada sauce. They are common breakfast foods that are topped with meat, eggs, cheese and cream.
The masa, or dough, used to make tortillas and sopes, which are thicker tortillas that aren't cooked quite as crispy
We cooked the sopes, or thick tortillas, once before adding toppings, then again as we were adding the toppings
Sopes are a thicker, softer tortilla topped with beans, meat, lettuce, salsa, cheese, and cream
We made chicken enchiladas in mole, a spicy sauce made with chilies and chocolate
The plaza outside El Castillo, the castle
The spire, or tower, at the top of the castle, surrounded by lush gardens
