






King Alfonso XIII came up with the idea of having a small dish that he would eat before drinking wine. This dish came in the form of a smaller portion of a meal and would come in a small plate that also worked as a lid for his drink. This was so he would eat the dish before drinking wine.
This is how tapas became small dishes that you eat as an entree or as a sort of snack when going out. The food here in Spain is very different from one place to another, not only based on the location and weather, but also the time of the year.
A type of food that is very common here is Iberic ham, and there are many different ways to eat it here. One of them is as Presa Iberica al Mojo Picon, which means Iberic Press with Mojo Picon.
Thanks to my tapas class I was able to taste this amazing pork dish that was savory, a bit spicy and juicy.
To prepare the dish you need to first make the Mojo Picon by putting garlic, cumin, cayennes and salt together inside of a mortar and making a paste. Then you need to add the peppers, olive oil and vinegar until you get a uniform paste. For the meat, all you need to do is cook it in a pan with some olive oil at medium heat.
