The guide explained how the cacao is intricately linked to Tabasco's early history. One of the first civilizations that thrived in Tabasco was the Olmeca, and they cultivated and processed cacao. Later, in the Aztec and Mayan civilizations, the plant was consumed not only as food and drink, but also used as currency and in religious ceremonies.
At the end of our tour, the guide recommended that I try a local drink, pozol, with the chocolate I bought. However, she cautioned those that try pozol will fall in love with Tabasco, the state they encounter while drinking it, and have to return. I thought to myself that it was too late— I had already fallen and hoped to return very soon indeed!
