Traditional Japanese Food - あじのひらき

That day it was a little cold outside, so my host mom made sure every component of the meal was hot!

Is this food connected to the local environment? How?:

あじのひらき is directly tied to Japan because horse mackerel is abundant there and relatively inexpensive. And before refrigerators, fish would be split open, salted, and dried to keep it from spoiling. It is a very traditional dish, and I am so glad my host mom decided to share it with me!
