Walking around Lyon, I continued to see bright red bread or bright red tarts. Asking my host family, I found out that red, candy pralines are a famous Lyonnais food that I had to try!
An iconic dish in Lyon is brioche aux praline (bread with pralines in English)! This dessert bread is bright red because of the red pralines in it. In the United States, there are pralines, but only in Lyon are there red candy almonds, also called pralines, that they use to make brioche aux praline!
It was absolutely delicious! The bread was soft in the middle with crunchy, red pralines throughout it. It reminded me of a red, crunchier cinnamon roll!
The City of Lyon website gives a praline tart recipe! The ingredients are 320g of butter (warm), 5g of salt, 200g of icing sugar, 66g of almond powder, 2 eggs, 533g of flour, 1 vanilla bean, 500g of liquid fresh creme and 500g of French pink pralines. Each morning, the bakeries around Lyon make the dough and cook the bread, so they can sell the bread that day!
