Noodle dishes are some of my favorite foods in China, especially noodles mixed with vegetables, meat and chile with no soup. They are cheap, delicious and healthy, and they can be eaten at any time during the day as a snack or a meal.
Noodles can be prepared in many different ways. To make the noodles, chefs make dough out of flour and water. Chefs can use rice flour, wheat flour, buckwheat flour, potato flour or mung bean flour. Next, they pull the dough into noodle shapes by hand or by placing it into a machine. Afterwards, the pulled noodles are boiled in water to be cooked properly. Once the noodles are cooked, they can be tossed in a soup or served on their own with vegetables, meat or fish, seasoning and sometimes sauce. You can add as many ingredients as you want or keep the noodle dish very simple.
