Let's Talk About MOLE

Introduction:

Mexico has some of the best food in the world! One of the best parts of traveling is trying foods you otherwise would not have gotten the opportunity to try. Here in Mexico, they blend flavors and use corn in the most creative and inventive dishes imaginable. Who knew you could drink corn in a delicious beverage called Atole? Each time I try something new, I know I am in for a treat. Whether I like the taste or not, I learn about a new flavor. This week's topic will take you all on an adventure, too!

 

What food did I try?:

Oaxaca has many traditional foods that are unique to this region. Some of my favorites among these are tlayludas, a large thin tortilla topped with refried beans, quesillo, avocado and meat; memellas are made with a smaller, thicker tortilla topped with pork fat, beans and queso; molotes are a fried bread, stuffed with meat, or potatoes. The best of them all is mole. Mole is a sauce that is spread over chicken and served with rice. Mole is known for its diverse flavors and distinctive colors. For instance, mole rojo is red and has a light, herbal flavor; mole amarillo is yellow and a bit spicy; mole verde is green and tastes like fresh herbs and spices.
