Xi'an - A Foodie's Paradise

You can see this preference by just scouting out the different types of foods that line the street, many of which are lamb dishes.

The ancestry of the Hui people can be traced back to Persian and Arab merchants who came into China ,and many settled down as farmers. As with farmers in all different parts of the world, peasant foods become a daily staple. Peasant foods are quick dishes that are filling and inexpensive so that the peasant may have enough energy to continue working for the rest of the day. It makes sense, doesn’t it? Efficient and cheap but still delicious.

All these factors and more intertwine to form a unique environment, in which the Hui people develop their own flavor and make their mark on the Xi’an food scene.
