The two dishes that are most connected to the environment are trucha (trout) and the juices. The fresh trout comes directly from the big lagoon in the area, which many citizens are preparing to eat for semana santa (Holy Week). The vast majority of pastusos (citizens of Pasto) are Catholic, so they will eat fish instead of meat from Sunday to Sunday next week. I look forward to having juanesca (a soup made of fish, beans, peas, plaintains, garlic, onion, and tomato) with friends next week, as this dish is only served during la semana santa.
