As I mentioned earlier Australian cuisine isn't very "Australian", as there's not a lot of food that is uniquely from here. Most of it is borrowed from other western countries, especially the U.K. and the U.S. There's a lot of burgers and fries, and a lot of meat pies. But one food that is uniquely Australian is pavlova, a food reserved for special occasions and holidays.
Pavlova is a kind of meringue-based cake that's usually covered in crispy bread and topped with whipped cream, strawberries, kiwis, and other fruit and berries (https://en.wikipedia.org/wiki/Pavlova_(cake)). Pavlovas can range from all-white to a variety of colors. Its origins are hotly debated. Both Australia and New Zealand claim to have invented it. It may have been named after the Russian ballerina Anna Pavlova, who visited both countries in the 1920s.
Pavlova is really soft. It's basically all cream and reminds me of eating marshmallows. The only hard parts are the crusty crumbles on the outside and the fruit. The meringue filling is so sweet I can't eat more than a slice. I was told that it's whipped eggs with sugar that are topped with sweetened fruit and surrounded by a layer of crunchy, sugary bread.
