Flavors of Botswana

It is usually served with phaleche, which is a stiff porridge made from white maize meal (cornmeal) mixed with water. The side dish, mashed butternut squash, is made with heavy cream, cinammon and cayanne pepper. This gives the dish a savory, sweet flavor.

Is this food connected to the local environment? How?:

Everything on the plates I ate was freshly grown or butchered at the farm, which made me feel better than eating something at the store. Almost every family has a farm outside the village with land to grow crops and trees and raise cattle. Many people raise their own goats and chickens in their yard and are able to sell the eggs to people in the community. All of the animals are free-range as well, so you will find packs of chickens, goats and cows roaming on the roads and in the bushes.
