The National Food of Jordan: Mansaf!

Introduction:

Mansaf is a dish that plays the role of connecting people and is often served to large groups of people in Jordan and in other Arab countries like Palestine and Saudi Arabia. It is cooked with a special fermented yogurt along with rice and lamb. Finally it is served on thin bread. I ate mansaf often because it was a dish meant to be shared with others. It is customary to eat mansaf on one large plate with five to seven other people. 

What food did I try?:

I tried mansaf, which is pronounced "man-saaf' in Arabic. Jordanians often serve mansaf when they have many guests in their home as a way of building bonds by making people eat together around one large plate. 

How did I feel when I tried it?:

I felt incredibly refreshed after eating mansaf and very warm, especially when eating it on a cold night in Amman, the capital of Jordan. Mansaf has a warm and soupy texture to it that gives you a hearty feeling and fills your stomach. I felt cherished to be able to eat with others, share a meal and spend time together after finishing my plate.

How is the food prepared?:

First, the lamb is boiled in water until it is cooked through, and then spices like cloves, cinnamon, allspice and bay leaves are added.
