The cuy slowly rotates over the flame so it is evenly cooked. They season it with salt and pepper but nothing else!
Chontacurros can be eaten raw or grilled. The worms are squirming if you eat them raw because they are still alive! To grill them, you stick them on a wooden kebab stick and lay them on the grill for a few minutes.
All the foods I described are certainly connected to the local envrionment. Normally, you only find the chontacruos in the Amazon, as that is their natural habitat, and this explains why only the Amazon region is known to serve them. The cuys can be found in most regions of Ecuador, yet they are primairly raised in the Sierra region, so that dish is more connected to the local envrionment of the mountain region. As for the encebollado, it is extremely connected to the local envrionment since it is a national dish and can be found in any region of Ecuador.
