I ordered at one window and then took my receipt to another window, where I told them what I had ordered. Kumpir is similar to a loaded baked potato, but what makes it special is that the inside of the potato is whipped with butter and cheese before adding the toppings. The result is a smooth, velvety filling that’s incredibly creamy and rich.
Kumpir is very much connected to the local environment and culture. The toppings, like pickles, corn and olives, are common ingredients found all over Turkey. The sucuk is made from beef, reflecting Turkey’s predominantly Muslim population, as pork is not commonly consumed. Sucuk is a versatile food eaten at any meal, served with eggs, in sandwiches or even raw!
