Learning Where Mozzarella Comes From

I am taking a class on Italian food and culture! Last week, we had a field trip to a farm that has buffalo. The farmers use the milk from the buffalo to make cheese. You may know that cheese is made from milk and that milk comes from cows. But all mammals produce milk, and since buffalo are mammals, they also make milk. The buffalo milk is used to produce mozzarella.

On the field trip, we learned that the land the farm is on was once owned by the mafia but was confiscated (taken away from) by the Italian government. The family that has since owned the farm has run the farm and lived on it for 100 years! 

When we first got to the farm, we went to the field to see the buffalo. The animals were far back in the field, so we could not see them up close at first. The woman that runs the farm told us that buffalo are curious animals and that if we whistle, it may draw their attention, and they might come closer to check us out. I started whistling, and after about 10 minutes, the buffalo finally came over to see us at the fence! The buffalo were so cool up close! They look like cows but they have horns. On the farm, they love to eat the clover.

After we saw the buffalo in the field, we got to go to a pen that held baby buffalos!
