Ecuadorian Empanadas

My host family actually grows their own corn! I can see it from my window. 
With my empanadas, I always have something to drink. My favorite drinks are ones that are unique to this part of the world. If it’s hot out, I like to drink maracúya juice. Maracuya is a type of passionfruit, and its juice is refreshing and a little bit sour. If it’s cold out, I’ll eat my empanadas with coffee or something called colada morada. Colada morada is a warm drink made with fruit, purple corn flour, and spices. It tastes a bit like a hot smoothie with cinnamon, and is a dark purple color from the local corn used in it. Regardless of how or where I eat my empanadas, I always find them comforting and delicious!
