The base of the dish is a tortilla. There are two main types of tortillas in Mexico: corn and flour. Flour tortillas are more popular in the North (and also in the United States,) but corn tortillas are more popular in the rest of the country, including in Tlaxcala, which is in central Mexico. After heating up the tortilla, they add sauce, or salsa. You can choose either red or green, rojo o verde. This time I ordered one of each! The sauce is made of ingredients like tomato, chili, garlic and onion. Then they add cheese. If you want to add something extra, you could order potato, cooked similarly to French fries, and then add extra cheese on top. This is not the typical way to eat it, but if you are feeling extra hungry, it will fill you up and has great flavor.
Like I mentioned before, this meal was made fresh. That means the ingredients to make the dough for the tortilla, the vegetables used to make the sauce and the cheese and onion that go on top come from local farmers who grow the food nearby. These ingredients need healthy environments in order to grow. This means it is really important to keep the local environment clean so that all the food can stay healthy and fresh. Also, eating local food helps keep the planet clean because there isn’t additional pollution created by transporting food from far distances or by keeping it preserved in different ways.
