The base of this dish is, of course, beets, but it also includes potatoes, mayonnaise, and salt. Some variations include heart of palm, carrots, eggs, cilantro, onions, peppers, or basically anything else you could out in a salad.
The preparation is extremely simple: Boil beets and other vegetables or starches. Dice or chop boiled items. Mix in a bowl in mayonnaise. Salt to taste. Yum.
This dish is a traditional Costa Rican salad that is easy to make, low in cost, and, overall, pretty healthy (except maybe the mayonnaise). It is a staple in most households and is even featured on some Tico kid's shows.
