Moussaka - Bulgaria's Comfort Food

Introduction:

Bulgarian food has become quite the source of joy and comfort for me over the past three months. Some of the meals remind me of the Turkish food I grew up eating and brings back many sweet memories. Many Bulgarian dishes use grilled meat, local vegetables and fresh made bread. There are few foods that I have tried here and not liked very much, two of which are boza, a brown fermented wheat drink, and iskembe corba, which is a creamy soup made with cow stomach. 

What food did I try?:

One of my favorite Bulgarian dishes is called moussaka. It is a layered dish with chopped veggies and meat on the bottom and a fluffy baked topping made from egg and yogurt. Every family has a different way of making it and some argue over which vegetables should be included, but every variation at least includes potatoes and meat. I have tried moussaka from several restaurants, but of course the best ones that I have tried are homemade.

How did I feel when I tried it?:

I felt very warm and relaxed when I tried this because it feels like a meal your mom or grandma would cook for you when it's cold out or maybe when you're feeling sick.
