In Ireland, there are several holidays celebrated around Christmas which may be unfamiliar to you in the US. Many of these are tied to pre and post-Christian folklore.
In this Field Note, I discuss recommendations of Irish cuisine from my Irish friends, summarizing their selections, as well as landing on two new cuisines to try, to represent contemporary Ireland.
