The community celebrates 25 de mayo because it was the beginning of the process of declaring its independence from Spain. It is a holiday full of national pride and paying respect to the founders of the country. 

Is this tradition connected to its environment? How?:

The tradition of eating locro on this day is definitely connected to its environment. Locro is a thick stew that is perfect for eating on the chilly fall days of late May, and it also celebrates the shared culture of the Andes mountain countries. Locro is a national dish in Peru, Bolivia, Ecudaor, Argentina, and Southern Colombia. These countries share the Andes mountains as a major geographical feature and share their battles for independence against the Spanish Empire during the early 1800s.
