Peruvian Ceviche: A Zesty Fish Favorite

Introduction:

Peruvians are extremely proud of their food – and with good reason! With an estimated 400 to 500 typical dishes across the country, this country has earned worldwide recognition for its cuisine. In fact, Lima has the top-rated restaurant in all of South America, which also holds the title of the #5 best restaurant in the entire world.

This is partly due to the blend of flavors from Peruvian dishes and Chinese dishes – a fusion called Chifa. Aside from Chifa, Peru is known for having some of the most varied food in the world, which could be due to its multifarious geography and diverse immigrant population. For all these reasons, it was a huge challenge to choose just one dish to focus on, but in the end I wanted to highlight one of my favorite dishes: ceviche. 

What food did I try?:

While there are several different versions of the plate, traditional Peruvian ceviche is a zesty, flavorful plate made from raw fish, onions, sweet potatoes, corn, lettuce and rocoto (a spicy red pepper), covered in a lime dressing sprinkled with with cancha (toasted corn kernel).

How did I feel when I tried it?:

I first tried ceviche in Lima, as it's on the coast and was likely to have fresher fish.
