Secondly, Himmel und Erde's connection to the environment comes from its name. It is called heaven and earth because of its ingredients. Apples come from the trees, or "out of the sky," and potatoes coming from out of the earth. In fact, the word for potato in some parts of southern Germany is Erdapfel, which means earth apple. So you could say that there are two types of apples in this dish!
