Dosai is tremendously popular in South India, which makes sense because it is good to eat in the extreme heat. Dosai, like rice and other rice products, is easier for our bodies to handle in the heat than bread products would be. Dosai batter also lasts about a week, and so it can be made in large batches, saving time and energy. Knowing that the batter will last allows people to do other work during the day without worrying that the dosai made from the batter will be bad. Dosai is cooked thoroughly and so safe to eat, it is comfortable to eat in the heat and it is tasty!
