Zdravo, od Makedonija! (Hi, from Macedonia!). Here in Macedonia, the fall season has begun. The air is cool and the bright orange and red leaves are falling from the trees. During the fall season, the people of Macedonia love to make warm, cozy and flavorful foods. In Macedonia, cooking is an activity done with your family and friends and one of the main ways I have made wonderful friends in my community. Together, we bake red peppers to make Ajvar, a traditional spread for bread. We also roll the doll for Pastrmajlija, a tasty pizza with pork and cheese (which takes a lot of strength to make!). Exploring new foods has been one of the best parts of my journey in Macedonia so far, and I am excited to share fun recipes with you!
Traditional foods in Macedonia are very different from many foods in the United States. During my journey in Macedonia, I have tried many new and delicious foods such as Pastrmajlija, a tasty flatbread topped with pork and cheese; Moussaka, a type of lasagna made with potato, eggs and meat; and Baklava, a pastry often topped with honey and pistachio.
Although, I have loved nearly all of the foods I have tried in Macedonia, Ajvar has been my favorite recipes so far. Ajvar is a spread put on bread and crackers and one of the most popular foods in Macedonia.
