Food along the Camino de Santiago

Some foods such as Bacalao and curried meats are preserved.

Is this food connected to the local environment? How?:

As I walked through the country, I saw fruits, vegetables, and fish markets that were unlike any I had seen elsewhere on my travels. The products on sale had been picked locally in small batches for quick sale to meet the needs of the community. I was lucky enough to walk with a South African man that had moved there to work on farms and who contained an encyclopedia of knowledge on the topic of local agriculture.
