I tried bryndzové halušky. It is one of Slovakia’s most traditional and loved dishes! It is made of small potato dumplings mixed with a soft, creamy sheep cheese called bryndza (BRIN-zah). It is topped with pieces of crispy bacon.
I was really excited to try this dish when I came to Slovakia! I was nervous because I can be a picky eater, but I decided to try it and fell in love. It tastes like a creamy mac and cheese, but with soft dumplings and juicy bacon chunks.
The dish is made by grating raw potatoes, mixing them with flour and salt to create a dough, and then dropping small pieces of it into boiling water to make the dumplings, called halušky (hah-LOOSH-kee). Once cooked, the dumplings are mixed with melted bryndza cheese and topped with fried bacon pieces. It is very filling, so you do not eat too much of it!
