However, I introduced Ruth to adding pepper and using hot sauce on certain foods, and surprisingly, she loved it and started incorporating them into her meals! For the pancetta (pork belly), she seasoned it the usual way and added a pinch of honey to give it a nice, sweet flavor. She likes to add salt to the fried plantains, which creates an interesting mix of flavors, especially when paired with melted cheese. The potatoes are also salted, and I enjoy adding some hot sauce to give them an extra kick!
Boyacá is primarily rural, so much of the food is locally sourced. The state is especially known for growing potatoes and green onions, often exported to other regions of Colombia. Since I live in a smaller town, I frequently eat local dishes, which has been a big part of my experience here.
