Little potatoes are added to a pot of boiling water and cooked until the potato is ready to eat and the skin is crispy. Salt to taste is added on top of the potatoes. They are served with a side of red and green sauces.
Yes! There are over 30 different kinds of potatoes here, some of which are only able to grow in the Canary Islands due to the year-round warm climate. The islands here are all volcanic, so the soil here is unique as well. The potatoes were traditionally boiled in seawater as that was the resource most readily available long ago. Today, most people use normal water and just add salt to taste.
