Cooking Waffles

Save the water for last, and add it slowly until you reach the desired thickness for your batter. We usually measure about two cups into a glass but never use all of it. If available, you can substitute coconut milk for water to add a nutty, sweet flavor. Coat the waffle iron with butter, and pour batter inside, making sure not to overfill it and make a mess like I did! The waffles cook very quickly, so don't wait more than a minute to flip them. If you like them crispy, you can wait a little longer before removing them and stacking them on your plate. Last, dress your waffle with your favorite toppings. Mine are butter and LOTS of hard cheese. Enjoy!

Because flour is cheap around the country, it often features in many Belizean staples, or main foods. Breads, tortillas and waffles are among the many flour-based foods that offer a delicious meal and can fill your belly for a reasonable price. Also, due to the high cost of imported fruits and syrups, it is more common here to eat waffles with hard cheese.
