






I’m sure you were hungry after the ceviche Field Note, so for my second-to-last Journal, I wanted to share with you more delicious foods I have tried while living in Panama.
One of my favorite desserts in Panama (it is also popular throughout Latin America) is Arroz con Leche. Arroz con leche literally means “rice with milk,” but we would just call it “rice pudding.” It is especially popular during the holidays. For our Thanksgiving dinner, one of my Panamanian friends made arroz con leche. It was delicious. Here is the recipe for a large serving of arroz con leche to try with your friends and family.
Ingredients: 1 pound of rice, 16 cups of water, 2 cinnamon sticks, 2 small boxes of raisins, 1 can of evaporated milk and sugar (to taste). Directions: Bring the water to a boil, add the rice and cinnamon and stir every 5 minutes. Add the milk, raisins, and sugar. Stir and let it sit for 5 minutes and then put it in the fridge to cool.
