I also spotted some people riding donkeys and horses, which are also used to pull farmers and their carts with their harvested fruits and veggies. Also, while on my drive to Jericho, I spotted some camels on the side of the road!
Seeing how some of my favorite fruits and veggies grow! I got to visit a variety of organic farms in Jericho and got the opportunity to hand pick fruits and veggies that I got to cook later that night with my tour group. It was really cool to see what kousa, the zucchini used for kousa mahshi, looks like while growing. It turns out that kousa actually has prickly thorns on its vines and has a yellow flower that grows out of its head! I also got to pick fava beans, cauliflower, arugula, mint, parsley, garlic and onions!
