The main language spoken here is Nepali, although there are over 120 different languages spoken in Nepal due to the ethnic diversity of the country. However, English is widely spoken, particularly in urban areas (like Kathmandu) or heavily-touristed areas (like Chitwan).
Nepal uses the Nepalese rupee (NPR), with $1 being equivalent to about 150 NPR. While coins exist, people almost exclusively use bills in denominations of 5, 10, 20, 50, 100, 500 and 1,000. People mostly, however, will pay using bank cards of phone apps connected to their banks.
It definitely varies by the shop, but a large water bottle will normally cost about 50 NPR. However, most restaurants will give you bottled water for free, especially since the tap water, here, is not considered safe to drink.
In the Greenhood Nepal (the NGO that I work with) office, they have a cook who prepares dal bhat every day. Bhat is the word for rice, and dal is lentils, so really it is just rice with a kind of lentil soup. On the side, there is always some kind of vegetable/tofu dish cooked with curry and spices. Dal bhat is probably the most common dish in Nepal, and many people will skip breakfast and eat dal bhat for both lunch and dinner.
