Valencia and its Ocean Influence

It was cooked in huge pans that required two waiters to carry it! My paella had rice, chicken, green beans, lima beans and lemon juice.

La chufa (tiger nut) is used to make orxata (Valencian for horchata), a cold drink that's usually eaten with fartones (sweet bread pastries). Orchata is very sugary, so people drink it for dessert or as a snack. However, it does have nutrients because it's made with nuts (similar to soy milk or oat milk). Our tour guide told us that as a kid, his doctor told him to drink orxata because he needed to gain weight, and it would provide him with nutrients! It reminded me of tricking my nephew - a really picky eater - to drink PediaSure by telling him that it's a milkshake!
