Crêpes (pronounced "crayps") are a common street food in Paris. Restaurants that sell crêpes are called crêperies (prounounced "crayp-air-ees"). Crêpes are similar to sandwiches, except that instead of bread, they are made with a very thin, round pancake. They can be savory and eaten as a meal, or sweet and eaten as dessert.
Yesterday I tried a crêpe with ham, egg, and cheese. Earlier this week I also tried one with egg and mushrooms.
The crêpe was very warm and comforting. It was wrapped up in the shape of a pizza, with a paper towel at the bottom to catch any liquid that might flow out.
Using a very hot round griddle, the chef pours a small amount of batter and spreads it with a metal spatula into a thin round pancake. Then the chef places the fillings one one side and once everything is cooked, the crêpe is folded up.
Parisians often eat this food on the street. It is their version of fast food, but they are made fresh and filled with hearty ingredients and often include vegetables.
