Much like an American breakfast pancake, the apam balik batter is made from flour, eggs, sugar, baking soda and water. Malaysia's special ingredient for this pancake and many other recipes is coconut milk. They pour the batter into a griddle and as it is cooking they begin to add the filling. The traditional filling is butter, peanuts, sweet corn and sugar. Other fillings are made with coconut. Modern recipes might use chocolate or even cheese.
Malaysia grows enough coconuts for the entire country. This means that the coconut products in Malaysia are made from the coconuts that were grown in Malaysia. Where does your fruit come from? Fruit might have stickers that tell you where it was grown. Does it come from somewhere in the U.S.?
Coconuts grow on palm trees. The coconut palm is called "The Tree of Life" because you can use every part of the tree. No part of the plant is wasted. Malaysians use the tree trunk, the leaves and the coconut fruit itself. Coconut milk, coconut water and coconut oil are all very common here. It is not unusual for Malaysians to cook pancakes with coconut milk and shredded coconut.
