The ingredients in the Kansai version of Okonomiyaki are mixed together while the Hiroshima version is layered. Moreover, the Kansai version has a lot of ingredients, while the Hiroshima version has less ingredients like pork, yakisoba, batter and cabbage.
Although Okonomiyaki is found throughout Japan, it is mostly associated with Kansai and Hiroshima. The word Okonomiyaki means "cooked how you like it." Okonomiyaki was used a lot during times of need, especially after the bomb was dropped in Hiroshima.
