They serve a "mini" traditional Irish breakfast consisting of pork sausage, bacon, fried eggs, Clonalkilty black and white pudding, beans, toast and "chips," or hash browns! I had never heard of black and white pudding before living in Ireland. The white pudding consisted of oatmeal, pork, potato starch, onions, and spices. The black pudding was similar, made up of oatmeal, onions, beef, potato starch, spices and beef blood!
On Thursday night, I attended "The Elton John Show" at the Town Hall Theatre in Galway. This was an Elton John tribute tour based out of the U.K., and it was the first time the tour had visited Galway! Needless to say, Elton John has been on repeat all week!
My best friend, Sarah, came to visit this week and we had a lot of fun traveling around Ireland together! One of my favorite memories from the weekend was braving the strong Irish winds on bikes as we explored the island of Inis Mór together. Another favorite moment of mine took place when we were climbing down from the top of Dún Aonghasa and we realized that we were the only people up there. It was so peaceful and the view was breathtaking!
For leisure, I am currently reading the novel Normal People by Sally Rooney. The story is set in Ireland, and I feel as though I have a better understanding of the characters and settings after living here for a few months. I especially love reading about a town or region that I have already visited! At work, I also read a few research articles to gain a better understanding of current procedures in the field.
