Bandeja paisa can take a while to make since, although simple to prepare the dish requires so many different types of food. The beans, meats, plaintain, arepa, egg or whichever foods you want to include all need to be prepared separately. Then, after all the different foods are ready, they are squeezed onto the bandeja (platter) together and served!
Originally, this dish was created for the laborers in this region of the country. It was the perfect meal for workers who needed a protein-packed dish while working all day, climbing up the mountainous terrain and working on the farms.
