Food in Senegal: A Vegetarian Perspective

Once the attaya and sugar are added to the water, the tea is poured into a glass, which creates foam on the top of the tea. This process is repeated several times to make more foam. I always drink attaya at the end of lunch, and it is served on a large tray. My friends and I never start class unless we have our cup of attaya!

Attaya has three ingredients: chinese green tea, mint and sugar. The culture of drinking tea was introduced by traders from the middle east in the 11th century. They also introduced the religion of islam, and today 90% of Senegalese people are Muslim. Today, attaya is served to house guests or at the end of meals to spark conversations. This is an example of Senegalese Teraanga or hospitality!
