One of the most common and, in my opinion, one of the most tasty traditional Spanish dishes, is the tortilla. A very simple idea though difficult to craft perfectly, the tortilla consists almost entirely of potatoes and eggs. It is essentially a potato omelette, though it is thicker than your typical American omelette. Onion, cheese, and ham are also commonly thrown into the tortilla, but it is just as good plain. There is an eternal debate in Spain and in Galicia over whether the tortilla is better served poco hecho (with runny egg) or hecho (more firm, non-runny egg). I slightly prefer hecho, though it is quite tasty either way. It is often served as a tapa (literally "little plate"), which are small, free dishes of typical Spanish foods often given by restaurants before a meal.
